One-Pan Red Wine Chicken & Pasta

One-Pan Red Wine Chicken & Pasta
Serves 3-4
Time: 20-30 Minutes

| Ingredients |

2 Boneless Skinless Chicken Breasts, Halved
1 Teaspoon Garlic Powder
¼ Teaspoon Cayenne Pepper
3 Tablespoons Butter
2 Tablespoons Olive Oil
1 Large Onion, Diced
3 Cloves Garlic, Minced
One 750-milliliter Bottle Light Red Wine (DO NOT USE COOKING WINE)
1-2 Cups Water and some for deglazing
1 Pound Spaghetti
½ Lemon Juice
1 ½ Cups Feta Cheese
2 Cups Chopped Fresh Basil

| Instructions |

Season chicken breasts with salt, pepper, garlic powder, and cayenne on both sides.

In a large wide pot with high sides over medium high heat, melt butter and olive oil together. When hot, add chicken breasts and brown on both sides. Chicken will be fully cooked when it reaches an internal temperature of 165°F. Remove from pan, slice into long slices, and set aside.

In the same pan, leaving all bottom bits, add onion and a splash of water to deglaze the bottom. Scrape bottom of the pan to help release the fond. Cook onion until soft. About 3 minutes. Add minced garlic, cook an additional minute.

Add entire bottle of wine, 1 cup of water, and bring to a soft boil. Season with salt and pepper and add pasta. Stir to separate the noodles. Cook pasta according to package instructions. NOTE: Paste may require additional time, if the wine becomes a thick sauce before the pasta is completely cooked, add small amounts of water and allow pasta to continue cooking. Amount of water will vary.

Once pasta is cooked and sauce has reduced, remove from heat, add fresh lemon juice, feta cheese, and fresh basil. Stir until well incorporated.

Serve with chopped chicken and enjoy!

Best served immediately.
